发帖数: 555 | 3 以上几种都很常见。说实在的，如果比较怕甜，那以上这些都不会讨喜
这个是不太经常做，但是其实老美方子里面经常出现的：不甜腻pastry cream。比如
bavarian cream,
lemon pie什么的，里面都是类似咚咚。
这个方子的好处是：可以调整糖，甚至不放糖。口味很清单，很smooth。
用来涂蛋糕表面也不是不可以，虽然看起来会稍微不太一样，会显得比较“半透明”
方子：1杯牛奶，1/4杯糖煮开。4个蛋黄手工打散后，打入1/4杯淀粉(40g corn starch
)。慢慢边搅拌
蛋黄糊边倒入热牛奶。切不可太快。全部倒进去后，再全部回锅小火煮到黏稠，温度>
160F，刚刚开始pu
pu 冒泡就好了。别煮过了。稍微放凉一下放几滴vanilla
这个就是base。这东西仔细盖严实，把塑料纸推到液体表面沾上防止起皮，冷藏过夜后
，可以跟a bunch
of stuff拌在一起，做成各种icing
基本方子：+ 2 tbs 切丁软化的butter一起打匀，是pastry icing。
加一包cream cheese打匀 (这个是本人的favorite)
加单独打发的heavy cre |

发帖数: 555 | 4 不是icing的icing: 巧克力ganache。这个东西也可以控制甜度，买黑巧克力就好了。另外就是一定要买
最贵最好的巧克力，味道差别太大了！涂面，挤花都还算容易，只要别紧张的手出汗给捂化了就成。味道不
用说了，真的很rich很好。什么都好，就是成本巨高，热量惊人。
这个东西一般是做夹馅比较多，但是我喜欢这个颜色做底，所以经常冷藏一下让它稠一点，然后挤花涂面都
好。
基本方子：heavy cream 50g 小火煮到刚刚冒气，关火，加细细切碎的chocolate 112g, 拌到融化。
加2 tbs butter拌匀就好了。我一般要冷藏一下才觉得可以涂蛋糕，不然太稀了。
上面是bittersweet，如果一定要巨黑的巧克力，86%什么的，那要适当调整比例，增加其他东西。不然会
变的硬邦邦很脆，不好吃了。
这个东西里面也可以跟cream cheese, sour cream, mascarpone, 甚至ricotta 之类混搭。欢迎来

发帖数: 2347 | 11 我觉得你说反了。ice dam的形成主要是attic内部屋檐处绝缘材料放多了缘故，屋檐处
是跟外面通着的，如果放绝缘材料就会导致空气不能沿屋顶内部流通，产生局部的热点
。房檐内部不放绝缘材料房顶内外温度差很小，就不会把雪融化，也就不会形成ice
dam。 |

若漏地板上， 很可能是tube接口坏了。

因为形成ice dam了，家里insulation也不好，我就直接打开阁楼的两边窗户让空气对
流，使得阁楼温度降低。这两天晚上，每次heating加热时，几乎都会听到阁楼一声闷
响，好像什么东西断了的声音。我家是forced air heating。机器在地下室，热气从地
下室直接送到阁楼，然后再通过天花板分到二楼的房间。
让阁楼窗户大大开着，会有什么后果？现在担心死了，那个声音还不小。 |

dam后面产生积水，这样才不会漏水下来。
家在boston，今年雪灾，很多家都产生了ice dam，搞不好soffit很容易进水，有时甚

立刻停下来跟着音乐开始跳舞（就是两脚不动上身和腿跟着节奏又扭又颠的那种），只
见ice cream truck的司机放慢了车速，看着正在跳舞的小宝，在驾驶座上跟着小宝一
起扭。看的我哭笑不得。车开出去好远了小宝还在那里看着远去的车很投入的跳。。。

欧巴马政府把对公共或国家安全构成威胁、与犯罪帮派有关系、或曾犯过严重罪行

零上了啊，心里那个火大，你就不能然我休息一天不去外面么？
吃了午饭，马上架梯子上屋檐（我们只有在后院那一侧有一条4，5米长的ice dam, 最
剧烈的地方有半尺高，一尺多深，上礼拜试着敲过，很难），上去一看，又积了3寸的
雪，用roof rake一把拉，雪下面的shingle都湿嗒嗒的 - 已经开始化了。用roof rake
弄了一会以后，想还是乘着气温高弄ice dam吧。这一通敲，全敲掉了，这冰都开始松
了，上礼拜像砖头，今天就像木头，这么个差别。
都敲了以后，down sprout里的水流声音明显了点（心里作用？），看着湿漉漉的房顶
，心里挺后怕的，要是窝在家里休息，这水八成是要漏进房子了。 |

年对方就告诉我，今年这个雪比较轻，不重，我们家的屋顶很斜，以这个雪的程度，基
本不会对屋顶造成漏的损失，不除没有大关系
有这样比较专业的判断之后，心理上对不除ice dam就很放松，没有精神压力。

明年我打算试试ice chisel，爱斯基摩人的常用工具，冰钓钻冰用的，感觉除ice dam

有一个是ranch,房顶厚厚的雪,没有一点化的迹象,也可能家里没人,没开暖气.我的房子
是新房子,但ice dam遭灾了,同一个builder另一个地方今年刚卖的房子,大冰柱比我家
还多.我家attic 的insulation应该是R38外加blow in的双料insulation,但还是不顶用
.现在发现有两个问题,一个是attic entrance的木板后边没有insulation,另一个是
blow in的insulation挡了一些房檐通气口. |
