My comment:
(a) There is nothing like this in Taiwan, despite influx of Beijingers
around 1949 to Taiwan. The content of the meat cake looks like
lasagna

dish.

A question to you: Is the cake indigeous to Beijing--or at least to northern
China? How to make the 千层--like lasagna, by placing a layer upon another?

京东肉饼源自民间,年代久远。据说,明初永乐年间曾传入宫中,
成为一种宫廷小吃。自此,身价倍增。制作方法日益精进。以通县、顺义
一带最为有名。
京东肉饼是京式传统面食。选新鲜瘦猪肉末500克,甜面酱50克,
葱末250克,香油、盐、味精、姜末适量,拌匀打开成馅。将面粉1000
克加700克温水或凉水,搅拌揉成面饧,略放使之滋润。制饼时,预将饼
铛烧热。把饧好的面搓成条按扁,将肉馅放入包好。再把面剂口朝下擀
成一直径50厘米左右圆饼。擀时要先擀外圆,再擀中间,以免肉饼不均或
挤出。将肉饼放在铛上,适当翻转,待两面焦黄后刷油。这样,个大皮薄
馅匀,外焦里嫩,鲜香可口的肉饼就可出锅。吃京东肉饼,要先切成三角
块,可蘸蒜、醋,配小米粥而食。给予充分肯定。
将白面粉加入温水和成面团;将牛肉剁成肉末放入大碗中,加入豆豉、
黄酱等调味品拌成馅料。白面团饧后揪成大面剂,用手按扁后加入馅料,
制成饼状。饼铛烧热后刷一层薄油,放入饼坯烙至两面金黄、馅料成熟就
成了。无论配腌萝卜条、腌黄瓜条,还是再熬点粥,皆可称为家庭春季美
食。
京东肉饼以牛羊肉为馅,每个大则约500克,小的也足有300克。
京东肉饼为北京以东夏垫镇(属今大厂回族自治县)杨景禄(别名大麻
七)所创制。据传1770年乾隆皇帝路过此地,曾品尝过这种肉饼,对其
色香味赞不绝口。从此京东肉饼生意大振,至今仍为很多北京人喜爱。 |
